This ancient sturgeon, the Baerii, generally produces her eggs the latest which gives a more mature flavor profile as well as color.Traditionally jet black, this caviar can range from gunmetal to just almost navy blue and it's pearl tends to be small and poppy.

This fish thrives all around the world, but our favorites tend to come from Uruguay or Poland.
